Operation Profile: Is it possible to raise wine sales per cover by more than 10%, even in a soft economy? Of course, as this Silicon Valley restaurant demonstrates with its clever, on-going wine sales contests.

Wine Merchandising: "Pricing as Promotion". This Los Angeles restaurant is a local landmark (it opened its doors in 1908). But its value pricing and its 77% pouring cost (!) are raising eyebrows and attracting patrons to its wine selections.
